Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, combine the softened unsalted butter, packed brown sugar, and granulated sugar. Beat until light and fluffy.
- Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture until just combined.
- In a small bowl, mix together granulated sugar and ground cinnamon for the coating.
- Roll tablespoon-sized portions of dough into balls and coat in the cinnamon sugar mixture.
- Place on prepared baking sheets, spacing about 2 inches apart, and bake for 9-11 minutes.
- Let cool briefly on the sheets before transferring to wire racks to cool completely.
