Description
If you’re craving a delightful combination of rich flavors and a bit of heat, look no further than Cajun Chicken Spaghetti in Creamy Garlic Mozzarella Sauce.
Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 tablespoon butter (for searing chicken)
- 8 ounces spaghetti
- 2 tablespoons butter (for sauce)
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1½ cups shredded mozzarella cheese
- ½ teaspoon salt (or to taste)
- ½ teaspoon black pepper (or to taste)
- 2 tablespoons fresh chopped parsley
- ½ cup reserved pasta water (as needed)
Instructions
- Begin by patting the chicken breasts dry with paper towels, ensuring they are free of excess moisture. Generously coat both sides of the chicken with Cajun seasoning.
- Heat the olive oil and butter in a spacious skillet over medium-high heat. Once the oil is shimmering, carefully place the seasoned chicken in the skillet. Allow it to cook for 5–6 minutes on each side until golden brown and cooked through.
- As the chicken cooks, bring a large pot of salted water to a rolling boil. Once boiling, add your spaghetti and cook according to the package instructions, stopping just shy of al dente.
- Using the same skillet that you cooked the chicken in, lower the heat to medium. Add the two tablespoons of butter and then the minced garlic, sautéing it for about 30 seconds.
- Pour in the heavy cream and let it gently bubble; gradually add in the shredded mozzarella, stirring continuously until melted.
- Toss the drained spaghetti into the skillet with the creamy mozzarella sauce.
- Season the pasta with salt and black pepper to taste. Serve immediately.
Notes
Ensure that your skillet is large enough to accommodate the chicken without overcrowding, as this ensures even cooking.
