Instructions
- Kick off your baking adventure by preheating the oven to 375°F (190°C).
- Line a muffin tin with paper liners.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt. Whisk these dry ingredients together until they’re fully blended.
- In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Gently pour the wet mixture into the bowl of dry ingredients and fold until just combined.
- Scoop the batter into each muffin cup, adding dollops of creamy peanut butter on top. Swirl the peanut butter into the batter.
- Bake for 18–20 minutes or until a toothpick comes out clean. Let cool before transferring to a wire rack.
