- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 teaspoon onion powder
- 1/2 teaspoon red pepper flakes
- 1 cup sun-dried tomatoes, sliced
- 3 cups fresh spinach
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 tablespoons fresh parsley, chopped
Instructions
- Start by patting the chicken breasts dry using paper towels. Season both sides generously with salt, black pepper, paprika, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Sear them for about 2 to 3 minutes on each side or until they become lightly golden.
- In a separate mixing bowl, combine the chicken broth, heavy cream, minced garlic, onion powder, parmesan cheese, and red pepper flakes. Whisk the mixture until it’s completely smooth.
- Pour the prepared sauce over the seared chicken in the slow cooker. Make sure the chicken is well-coated. Next, evenly sprinkle the sliced sun-dried tomatoes over the top.
- Cover your slow cooker and set it to cook on LOW for about 5 to 6 hours or HIGH for about 3 to 4 hours.
- About 20 minutes before you’re ready to serve, stir in the fresh spinach.
- If you prefer a thicker sauce, mix the cornstarch and water together in a small bowl to create a slurry. Stir this into the slow cooker and allow to cook for an additional 10 to 15 minutes.
- Before serving, garnish the dish with chopped fresh parsley and additional parmesan cheese if desired.
Notes
For a dairy-free version, use coconut cream and omit parmesan cheese.
