  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon onion powder
  • 1/2 teaspoon red pepper flakes
  • 1 cup sun-dried tomatoes, sliced
  • 3 cups fresh spinach
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by patting the chicken breasts dry using paper towels. Season both sides generously with salt, black pepper, paprika, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Sear them for about 2 to 3 minutes on each side or until they become lightly golden.
  3. In a separate mixing bowl, combine the chicken broth, heavy cream, minced garlic, onion powder, parmesan cheese, and red pepper flakes. Whisk the mixture until it’s completely smooth.
  4. Pour the prepared sauce over the seared chicken in the slow cooker. Make sure the chicken is well-coated. Next, evenly sprinkle the sliced sun-dried tomatoes over the top.
  5. Cover your slow cooker and set it to cook on LOW for about 5 to 6 hours or HIGH for about 3 to 4 hours.
  6. About 20 minutes before you’re ready to serve, stir in the fresh spinach.
  7. If you prefer a thicker sauce, mix the cornstarch and water together in a small bowl to create a slurry. Stir this into the slow cooker and allow to cook for an additional 10 to 15 minutes.
  8. Before serving, garnish the dish with chopped fresh parsley and additional parmesan cheese if desired.

Notes

For a dairy-free version, use coconut cream and omit parmesan cheese.
