- 1 lb Ribeye steak (or skirt or flank steak, thinly sliced)
- 4 large flour tortillas
- 1 medium onion, thinly sliced
- 1 bell pepper, thinly sliced
- 2 cups provolone or American cheese, shredded
- 2 tbsp butter or oil (for grilling)
Instructions
- To ensure tenderness, begin by slicing the ribeye steak against the grain into thin strips. If you’re having trouble achieving thin slices, consider freezing the steak for a short period. This helps firm it up, making it easier to slice evenly. Once sliced, set the beef aside while you prepare the veggies.
- Next, heat a pan over medium heat and add a splash of oil. Toss in the sliced onions and bell peppers. Allow them to cook, stirring occasionally, for about 5 to 7 minutes, or until they become soft and fragrant. Once they are cooked to perfection, transfer them to a separate bowl and set aside.
- Using the same pan, add the sliced beef and increase the temperature to medium-high. Cook the beef quickly for about 2 to 3 minutes until it’s nicely browned. Season generously with salt, pepper, and any additional spices you enjoy, such as garlic powder or paprika.
- Lower the heat and generously sprinkle the shredded cheese over the cooked beef in the pan. Allow the cheese to melt into the beef for a couple of minutes, creating a creamy, delectable filling.
- Now it’s time to bring it all together! Lay your flour tortillas flat on a clean surface. Spoon a generous amount of the beef and melted cheese mixture into the center of each tortilla, followed by a portion of the sautéed onions and peppers. Carefully roll the tortillas, tucking in the sides as you go.
- Heat a bit of butter or oil in the same pan over medium heat. Place each wrap seam-side down in the pan and grill for about 2 to 3 minutes until golden brown. Flip the wraps gently using a spatula, and grill the other side for an additional 2 to 3 minutes.

For even more flavor, marinate your beef in a mixture of soy sauce, Worcestershire sauce, and garlic for a few hours before cooking.
