  • 8 chicken drumsticks (skin-on for flavor)
  • 1 large onion, thinly sliced
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 tablespoons honey
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh rosemary or parsley for garnish

Instructions

  1. Start by patting the chicken drumsticks dry with paper towels.
  2. In a separate mixing bowl, combine the olive oil, soy sauce, honey, minced garlic, paprika, dried thyme, dried rosemary, salt, black pepper, and crushed red pepper flakes. Stir until blended.
  3. Pour the seasoning mixture over the chicken drumsticks and toss until evenly coated.
  4. Layer the sliced onions at the bottom of the crock pot.
  5. Arrange the seasoned chicken legs in a single layer over the onions.
  6. Cover and cook on Low for 6–7 hours or on High for 3.5–4 hours.
  7. If desired, broil the chicken for 3–5 minutes for crispy skin.
  8. Plate the drumsticks and garnish with fresh rosemary or parsley.

Notes

For maximum flavor, marinate the chicken legs overnight in the seasoning mix.
