  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup buttermilk
  • 1/2 cup unsalted butter, softened (for filling)
  • 2 cups powdered sugar
  • 1 tbsp brewed coffee
  • 1 tsp instant coffee granules (optional)
  • 1 tsp vanilla extract
  • pinch of salt
  • 2 tbsp heavy cream

Instructions

  1. Start by preheating your oven to 350°F (175°C), and line two baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together using an electric mixer until fluffy.
  4. Add the eggs and vanilla extract to the butter and sugar mixture, and beat until fully combined.
  5. In a separate bowl, combine the cooled brewed coffee with the buttermilk.
  6. Gradually add the wet mixture to the dry ingredients, mixing until just combined.
  7. Using an ice cream scoop, portion the batter onto the prepared baking sheets.
  8. Bake the whoopie pies for about 10–12 minutes, or until they spring back when lightly touched.

Notes

Store in an airtight container for up to a week. For an extra twist, consider adding flavored extracts to the filling.
