- 1 tbsp brewed coffee
- 1 tsp instant coffee granules (optional)
- 1 tsp vanilla extract
- pinch of salt
- 2 tbsp heavy cream
Instructions
- Start by preheating your oven to 350°F (175°C), and line two baking sheets with parchment paper.
- In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together using an electric mixer until fluffy.
- Add the eggs and vanilla extract to the butter and sugar mixture, and beat until fully combined.
- In a separate bowl, combine the cooled brewed coffee with the buttermilk.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined.
- Using an ice cream scoop, portion the batter onto the prepared baking sheets.
- Bake the whoopie pies for about 10–12 minutes, or until they spring back when lightly touched.
Notes
Store in an airtight container for up to a week. For an extra twist, consider adding flavored extracts to the filling.
