These Baked Broccoli Cheese Balls are perfect for a delicious and nutritious snack!


Ingredients

  • 2 cups fresh broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or panko)
  • 2 large eggs, lightly beaten
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • olive oil spray

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Steam or microwave the broccoli for 2-3 minutes, then drain and pat dry.
  3. In a bowl, mix the broccoli, cheddar, Parmesan, breadcrumbs, eggs, green onions, garlic, salt, pepper, and paprika.
  4. Shape the mixture into 1.5-inch balls and place them on the baking sheet.
  5. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.

Notes

For a crispier finish, lightly spray the tops with olive oil before baking.
