These Baked Broccoli Cheese Balls are perfect for a delicious and nutritious snack!

- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or panko)
- 2 large eggs, lightly beaten
- 2 green onions, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)

Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Steam or microwave the broccoli for 2-3 minutes, then drain and pat dry.
- In a bowl, mix the broccoli, cheddar, Parmesan, breadcrumbs, eggs, green onions, garlic, salt, pepper, and paprika.
- Shape the mixture into 1.5-inch balls and place them on the baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
Notes
For a crispier finish, lightly spray the tops with olive oil before baking.
