Instructions

  1. Begin by peeling the ripe banana and breaking it into chunks. Place the banana, eggs, rolled oats, whole milk, and ground cinnamon into your blender. Blend on high speed until the mixture is completely smooth and well combined; this usually takes about 30 seconds.
  2. While your batter is blending, place a non-stick skillet over medium heat. Allow it to warm up for a minute or two until it’s hot but not smoking. Lightly grease the skillet with a bit of butter or oil to help prevent the pancakes from sticking.
  3. Once the skillet is ready, pour a portion of the batter onto the hot surface—about a quarter cup for each pancake should suffice. Cook until you see small bubbles forming on the surface and the edges start to set; this usually takes around 2-3 minutes. Carefully flip the pancake using a spatula and cook for an additional 2-3 minutes on the other side until it turns golden brown and the center is cooked through.

Notes
