- 4 medium fresh beets
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 small shallot, finely minced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup crumbled goat cheese (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Start by trimming the tops and roots off the fresh beets, then give them a good scrub under running water to remove any dirt. Place the cleaned beets into a large pot and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let them simmer for about 30 to 40 minutes, or until they are tender.
- In a separate medium bowl, combine the extra virgin olive oil and balsamic vinegar. Add the minced shallot to the bowl and whisk everything together until the dressing is well combined. Taste it and adjust the seasoning with salt and freshly cracked black pepper.
- In a large mixing bowl, gently combine the sliced beets with the dressing, ensuring they are evenly coated. Add in the chopped fresh basil and, if you’re using it, sprinkle the crumbled goat cheese over the top. Toss everything together gently so that the beets don’t break apart too much.
