Instructions
- Start by preheating your oven to 325°F (160°C). In a mixing bowl, combine the graham cracker crumbs and the ¼ cup sugar. Pour in the melted unsalted butter and mix until the crumbs are evenly coated. Press the crumb mixture firmly into the bottom of your prepared springform pan to create a solid crust.
- Bake the crust in the preheated oven for about 10 minutes, or until it is slightly golden. Once done, remove it from the oven and allow it to cool completely before pouring in the cheesecake filling.
- In a large mixing bowl, beat the softened cream cheese with ¾ cup granulated sugar until the mixture is smooth and creamy, about 2-3 minutes. Gradually add in the eggs, one at a time, mixing just until incorporated after each addition. Blend in the teaspoon of vanilla extract, followed by the sour cream and heavy cream. Pour this luscious filling carefully over the cooled crust, smoothing the top with a spatula.
- Place the filled springform pan back in the oven and bake for 40–45 minutes. You’ll want to see that the edges are set while the center remains slightly jiggly. When the baking time is up, turn off the oven and crack the door open to let the cheesecake gradually cool for an hour in the oven.
- After cooling, cover the cheesecake and transfer it to the refrigerator. Allow it to chill for at least 4 hours or overnight for the best results. Heat the berry preserves along with lemon juice until smooth and let that mixture cool a little before drizzling it over your chilled cheesecake.
- To finish, artfully arrange the fresh strawberries, blueberries, and raspberries on top of the cheesecake. Dust lightly with powdered sugar before slicing. Your Berry Cheesecake is now ready to serve!
