  • 1 lb large raw shrimp, deveined and tails removed
  • 2 tbsp blackened seasoning
  • 2 tbsp butter
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sweet corn (fresh, canned, or frozen)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Begin by bringing a large pot of salted water to a boil. Once boiling, add the cavatappi pasta and cook according to package directions, typically about 8-9 minutes, until al dente. Al dente means the pasta is cooked but still has a slight bite to it, which is important for holding up in the sauce. Once cooked, drain the pasta and set it aside.
  2. While the pasta cooks, take your raw shrimp and place them in a bowl. Sprinkle the blackened seasoning over the shrimp, making sure each piece is fully coated.
  3. Using a large skillet, melt the butter over medium-high heat. Once the butter is sizzling, add the seasoned shrimp in a single layer, ensuring that they have plenty of space and are not crowded. Cook the shrimp for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Reduce the heat to medium and in the same skillet, pour in the heavy cream. Scrape any browned bits off the bottom of the pan; these bits add flavor to your sauce. Stir in the tomato paste, sour cream, and grated Parmesan cheese, mixing until everything is smooth and combined.
  5. Add the cooked pasta, shrimp, and sweet corn into the skillet. Gently toss everything together to ensure that the shrimp and pasta are well coated in the creamy sauce.
  6. Once everything is well-mixed and heated through, garnish with chopped green onions and serve hot!

Notes

Ensure the shrimp are thoroughly deveined for even cooking. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days.
