- Start by peeling the peaches. For easy peeling, blanch the peaches in boiling water for about 30 seconds, then immediately transfer them to an ice bath. This makes the skin easy to slip off. Once peeled, chop the peaches into small, even pieces and set them aside.
- In a large, heavy-bottomed pot, combine the chopped peaches, granulated sugar, and lemon juice. Stir this mixture well and allow it to sit for approximately 10 minutes. This resting period allows the peaches to release their juices, which is crucial for a smooth jam.
- Bring your peach mixture to a gentle boil over medium heat. It’s important to stir frequently to prevent sticking or burning. After it begins boiling, add the pectin and boil vigorously for about 1 minute to start the thickening process.
- Stir in the bourbon, vanilla extract, and cinnamon if you’re using it. Allow the mixture to simmer for an additional 5 minutes. This step lets the flavors meld together, and the alcohol in the bourbon to evaporate, leaving just its tantalizing taste.
- To test if your jam is ready, place a small spoonful on a chilled plate. Run your finger through the jam—if it holds its shape and separates cleanly, it’s set. If not, return it to the heat and test again after a few more minutes of cooking.
- Sterilize your jars by boiling them for about 10 minutes. Carefully fill the jars with the hot jam, leaving about ¼ inch of headspace. Wipe the rims clean to ensure a good seal, then cap with sterilized lids. Process the jars in a boiling water bath for another 10 minutes to ensure preservation. Let the jars cool completely; you’ll hear the lids pop as they seal.
