Instructions
- Start by warming your griddle or nonstick skillet over medium-low heat. Set it aside after greasing it lightly with butter or oil to prevent sticking. In a separate bowl, combine 1½ cups of all-purpose flour, 2 teaspoons of baking powder, ¼ teaspoon of salt, and 1 tablespoon of granulated sugar. In another mixing bowl, whisk together 1¼ cups of milk, 1 large egg, 3 tablespoons of melted unsalted butter, and 1 teaspoon of vanilla extract until thoroughly combined.
- Once the wet ingredients are well-mixed, pour them into the dry mixture. Stir gently until just combined—be sure not to overmix, as this can lead to dense pancakes. Allow the batter to rest for about 5 to 10 minutes to give the baking powder time to activate while you prepare the streusel topping.
- In a small bowl, combine ⅓ cup of brown sugar, 1½ teaspoons of ground cinnamon, and ¼ cup of all-purpose flour. Add the diced cold butter to the mixture, and using your fingers or a fork, mix them together until you achieve a crumbly texture that resembles coarse crumbs. This streusel will add a delightful crunch and sweetness to the pancakes.
