- 1 sheet puff pastry (thawed, about 250 g)
- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp sugar
- 1 tsp balsamic vinegar
- 4 oz (about 115 g) goat cheese, crumbled
- 1 tsp fresh thyme leaves
- Salt and pepper, to taste

- Start by heating the olive oil and butter in a large skillet over medium heat. Once melted and hot, add the thinly sliced onions. Their powerful aroma will fill your kitchen as they sizzle in the pan. Sprinkle in the sugar, along with a pinch of salt and pepper, which will help enhance the natural sweetness of the onions. Keep stirring every few minutes to ensure they caramelize evenly. This should take about 15 minutes. Look for them to turn golden brown and soft. Add the balsamic vinegar and fresh thyme, continuing to cook for an additional 5 minutes until they become jammy in texture. The sugars will intensify, creating a richly flavored filling that ensures each tart is bursting with flavor.
- Once the onions are beautifully caramelized, it’s time to get the puff pastry ready. Flour your work surface lightly to prevent sticking, then roll out the thawed puff pastry until it’s about ¼ inch thick. With a sharp knife or pastry cutter, divide it into 6 equal rectangles. Place each rectangle on your prepared baking sheet lined with parchment paper, allowing a little space in between each one. Now, scoop a generous amount of the caramelized onion mixture onto each pastry piece, being careful to leave a small border around the edges. This will allow the pastry to puff up beautifully while baking. Crumble the goat cheese on top of each tart, adding a few extra thyme leaves for garnish.
- Preheat your oven if you haven’t already, ensuring it’s at the right temperature for optimal puffing. Slide the baking sheet into the oven and bake for about 15 to 18 minutes, or until the pastry is perfectly golden brown and puffed. Keep an eye on them as each oven can vary slightly in temperature. Once baked, remove the tarts from the oven and allow them to cool slightly before serving. This cooling period allows the flavors to meld and makes them easier to handle.
