These Carrot Cake Protein Bars combine the indulgent flavors of classic carrot cake with the benefits of a protein bar, perfect for a healthy snack.
Ingredients

- 2 cups rolled oats
- 1 cup grated carrots (about 2 medium carrots)
- 1 cup protein powder (vanilla or unflavored)
- 1/2 cup almond flour
- 1/3 cup honey (plus extra for drizzling)
- 1/2 cup chopped walnuts
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup water (or as needed)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, protein powder, almond flour, ground cinnamon, ground nutmeg, baking powder, and salt. Stir thoroughly.
- In a separate bowl, mix grated carrots, honey, vanilla extract, and water until smooth.
- Pour the wet ingredients into the dry ingredients and mix until combined. Fold in the chopped walnuts.
- Spread the mixture evenly in the prepared pan. Bake for 25 to 30 minutes until lightly golden on top.
- Let cool for 10 minutes in the pan, then transfer to a wire rack. Once cooled, drizzle with honey and cut into bars.
