Description

There’s something magical about a dish that combines nostalgia with comfort, and that’s exactly what you get with this delightful Comforting Banana Bread Cobbler.

Ingredients

Scale
  • 113 g unsalted butter, melted
  • 120 g all-purpose flour
  • 200 g granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 240 ml milk
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, sliced
  • 100 g light brown sugar, packed
  • 0.5 teaspoon ground cinnamon
  • Optional: 50 g chopped walnuts or pecans
  • Optional: 85 g chocolate chips

Instructions

  1. Start your cobbler-making journey by preheating your oven to 190°C. Next, pour the melted butter into your baking dish, tilting it to evenly coat the bottom.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. Gradually add the milk and vanilla extract, whisking until the batter is uniform and smooth.
  3. Carefully pour the prepared batter over the melted butter in the baking dish. Do not stir; the magic happens as it bakes, with the batter spontaneously self-layering.
  4. In a separate small bowl, combine the brown sugar and ground cinnamon. Generously sprinkle the cinnamon-sugar mixture over the bananas and batter.
  5. Place the baking dish in the oven and bake for approximately 35 to 45 minutes. Check for a golden-brown color on the edges.
  6. Once done, remove the cobbler from the oven and allow it to cool for 10 to 15 minutes before serving.

Notes

Ensure your bananas are overly ripe; the riper they are, the sweeter your cobbler will be. Store leftovers in an airtight container in the fridge for up to 3 days.
