Delicious Coronation Quiche

Description

A rich and creamy quiche inspired by the flavors of royal heritage.


Ingredients

  • 1 sheet shortcrust pastry (homemade or store-bought)
  • 1/2 cup milk
  • 1/2 cup double cream
  • 4 large eggs
  • 1/2 cup mature cheddar cheese, grated
  • 1/2 cup cooked spinach, drained and chopped
  • 1/2 cup cooked broad beans (or fava beans)
  • 1 tablespoon fresh tarragon, chopped
  • Salt and pepper to taste
  • 1 teaspoon butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together eggs, milk, double cream, salt, pepper, and tarragon until smooth.
  3. Roll out the pastry and fit it into a greased 9-inch tart tin. Blind-bake for 15 minutes, then remove weights and bake for another 5 minutes.
  4. Spread spinach and broad beans in the pastry shell, then sprinkle cheese over the top.
  5. Pour the egg mixture over the filling and bake for 25–30 minutes until set.
  6. Allow to cool for 10 minutes before slicing and serving.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days.
