A rich and creamy quiche inspired by the flavors of royal heritage.
Ingredients

- 1 sheet shortcrust pastry (homemade or store-bought)
- 1/2 cup milk
- 1/2 cup double cream
- 4 large eggs
- 1/2 cup mature cheddar cheese, grated
- 1/2 cup cooked spinach, drained and chopped
- 1/2 cup cooked broad beans (or fava beans)
- 1 tablespoon fresh tarragon, chopped
- Salt and pepper to taste
- 1 teaspoon butter (for greasing)
Instructions
- Preheat your oven to 375°F (190°C).
- Whisk together eggs, milk, double cream, salt, pepper, and tarragon until smooth.
- Roll out the pastry and fit it into a greased 9-inch tart tin. Blind-bake for 15 minutes, then remove weights and bake for another 5 minutes.
- Spread spinach and broad beans in the pastry shell, then sprinkle cheese over the top.
- Pour the egg mixture over the filling and bake for 25–30 minutes until set.
- Allow to cool for 10 minutes before slicing and serving.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days.
