- 16 ounces cottage cheese
- 2 large eggs
- 1 cup shredded cheddar cheese
- 2 cups mixed vegetables (bell peppers, zucchini, and broccoli), chopped
- 1/2 cup onion, finely chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 1/2 cup breadcrumbs or panko (optional)
- 2 tablespoons olive oil
Instructions
- Start by preheating your oven to 350°F (177°C).
- In a mixing bowl, combine the cottage cheese, two large eggs, dried basil, dried oregano, a pinch of salt, and black pepper.
- In a skillet, heat two tablespoons of olive oil over medium heat. Add the chopped mixed vegetables and finely chopped onions.
- In a greased baking dish, evenly distribute the sautéed vegetables and onions. Pour the cottage cheese mixture over the top.
- Carefully transfer the baking dish to the preheated oven, and allow it to bake for approximately 25-30 minutes.
- Once done, remove the bake from the oven and let it cool for about 5 minutes.

This dish can be made ahead of time and stored uncooked in the refrigerator until you’re ready to bake it.
