  • 4 wooden or metal skewers

Instructions

  1. In a mixing bowl, combine the olive oil, lemon juice intended for the marinade, minced garlic, dried oregano, and a pinch of salt and pepper. Whisk these ingredients together until well-blended, creating a fragrant marinade that will infuse the chicken with flavor. The acidity from the lemon juice helps to tenderize the chicken while the garlic and oregano add depth.
  2. Add the chicken cubes into the bowl with the marinade, tossing them to ensure each piece is evenly coated. This step is crucial for flavor development. Let the marinated chicken sit for at least 30 minutes.
  3. While the chicken is marinating, it’s time to get the skewers ready. If you are using wooden skewers, make sure you have soaked them in water for at least 30 minutes. This prevents them from burning on the grill. Thread the marinated chicken pieces onto the skewers, making sure to leave a little space between each piece for even cooking.
  4. Preheat your grill or grill pan over medium-high heat. Once heated, place the chicken skewers on the grill and cook for about 10–12 minutes. Be sure to turn them occasionally to ensure they cook evenly.
  5. While the chicken is grilling, prepare the tzatziki sauce. In a separate bowl, mix together the Greek yogurt, grated cucumber, fresh dill, lemon juice intended for the tzatziki, and salt to taste. Stir until the mixture is smooth and well combined.
  6. Once the chicken skewers are beautifully grilled, remove them from the heat and serve immediately. Place them on a platter with the tzatziki sauce on the side for dipping.
