Ingredients

  • 1/4 cup unsalted butter (softened)
  • 1/3 cup granulated sugar (plus more for rolling)
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup + 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking soda
  • Pinch salt

Instructions

  1. Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened unsalted butter and 1/3 cup granulated sugar. Cream until light and fluffy.
  3. Add the egg yolk and vanilla extract. Mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Form dough into 1-inch balls and roll in granulated sugar.
  7. Place on the prepared baking sheet and bake for 8-10 minutes.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use room temperature butter for best results.
