  • 6 slices provolone cheese
  • 1 bulb garlic
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste (for aioli)

Instructions

  1. Preheat your oven to 400°F (200°C). Begin by delicately slicing off the top of the garlic bulb. Place the bulb on a piece of foil, drizzle generously with olive oil, and wrap it snugly. Roast it in the oven for 35–40 minutes until the cloves become soft and fragrant. Allow it to cool before squeezing out the creamy, roasted garlic cloves.
  2. On a stovetop, heat olive oil in a robust pot or directly in your slow cooker if it has a sauté function. Sear the beef thoroughly on all sides to lock in those precious juices. Season the meat with salt, pepper, oregano, basil, and, if desired, a dash of crushed red pepper for an extra kick.
  3. Introduce the seasoned beef into your slow cooker, adding the beef broth and pepperoncini along with its flavorful juice. Cover and let the magic happen by cooking on low for 6–8 hours until the beef is tender enough to be effortlessly shredded.
  4. In a bowl, combine the mashed roasted garlic cloves, mayonnaise, lemon juice, Dijon mustard, and a pinch of salt and pepper. Stir until creamy and smooth. This aioli will be the perfect companion to your richly flavored beef.
