Instructions

  1. Start by preheating your oven to 350°F (175°C). While the oven heats, take your three prepared cake pans and grease them thoroughly with butter and a light dusting of flour.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt to combine the dry ingredients. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, then stir in the fresh key lime juice, lime zest, and vanilla extract.
  3. Slowly add your sifted dry ingredients to the wet mixture, alternating with buttermilk. Be careful not to overmix.
  4. Divide the batter among the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean. Let the cakes cool in their pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. In a mixing bowl, beat the softened cream cheese and butter until smooth. Gradually add in the powdered sugar, then mix in the lime juice, zest, vanilla extract, and a pinch of salt.
