- 500g lamb shoulder cut into chunks
- 2 tablespoons oil
- 2 large onions finely chopped
- 4 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 2 medium tomatoes finely chopped
- 1/2 cup yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 2 cups water
- 2 tablespoons fresh cilantro chopped
Instructions
- Begin by prepping all your ingredients to make the cooking process smoother. Chop the onions and tomatoes finely, mince the garlic, and grate the ginger. Cut the lamb into equal chunks to ensure they cook evenly.
- In a large pot, heat the oil over medium heat. Add in the finely chopped onions, and sauté until they turn golden brown.
- Once your onions are browned, stir in the minced garlic and grated ginger. Sauté until fragrant.
- Add the spices: turmeric, cumin, coriander, and chili powder. Stir well and allow to bloom for a minute or two.
- Add the finely chopped tomatoes to the pot. Cook down until they break apart into a thick paste.
- Lower the heat and mix in the yogurt, stirring continuously to prevent curdling.
- Add the lamb pieces to the pot, ensuring they’re well coated with the spice mixture.
- Pour in the water, stir, bring to a gentle boil, then cover and reduce the heat to simmer for 60 to 90 minutes.
- Once the lamb is tender, sprinkle in the garam masala and let it simmer for a few additional minutes.
- Garnish with freshly chopped cilantro before serving.

For an extra depth of flavor, marinate the lamb in yogurt and spices for a few hours or overnight.
