- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1 cup low-sodium chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by seasoning both sides of the chicken breasts generously with salt, pepper, and Italian seasoning. Allow to rest for a few minutes.
- In a large skillet, heat olive oil over medium heat. Sear the chicken breasts for about 6–7 minutes on each side until golden brown.
- Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth, scraping the bottom of the skillet to release browned bits. Let it simmer for 5 minutes.
- Stir in the cornstarch slurry and cook for an additional 2–3 minutes until the sauce thickens slightly.
- Add lemon juice and Parmesan cheese, stirring until smooth. Return the chicken to the skillet, spooning the sauce over each piece, and simmer for 2 more minutes.
Notes
Use freshly squeezed lemon juice for best flavor; consider stirring in a splash of heavy cream for richness.
