Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by seasoning both sides of the chicken breasts generously with salt, pepper, and Italian seasoning. Allow to rest for a few minutes.
  2. In a large skillet, heat olive oil over medium heat. Sear the chicken breasts for about 6–7 minutes on each side until golden brown.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping the bottom of the skillet to release browned bits. Let it simmer for 5 minutes.
  5. Stir in the cornstarch slurry and cook for an additional 2–3 minutes until the sauce thickens slightly.
  6. Add lemon juice and Parmesan cheese, stirring until smooth. Return the chicken to the skillet, spooning the sauce over each piece, and simmer for 2 more minutes.

Notes

Use freshly squeezed lemon juice for best flavor; consider stirring in a splash of heavy cream for richness.
