These Marinated Grilled Mushroom Skewers are a delicious addition to any meal and a healthy plant-based option that everyone can enjoy.

- ¼ cup olive oil
- ¼ cup soy sauce
- 2 tbsp balsamic vinegar
- 2 tbsp Worcestershire sauce (use vegan if needed)
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp honey or maple syrup
- 1 tsp dried thyme
- 1 tsp dried rosemary
- ½ tsp smoked paprika
- Salt & freshly ground black pepper, to taste
- 1 lb button mushrooms, cleaned and stems trimmed
- Wooden or metal skewers
Instructions
- Begin by preparing the marinade. In a medium-sized bowl, combine the olive oil, soy sauce, balsamic vinegar, and Worcestershire sauce. Whisk them together until well-blended. Add the minced garlic, Dijon mustard, and your choice of honey or maple syrup, stirring until combined. Sprinkle in the dried thyme, dried rosemary, and smoked paprika, and season with salt and black pepper. Whisk until smooth and aromatic.
- Place all the cleaned button mushrooms into a resealable bag or shallow dish. Pour the marinade over them, ensuring each mushroom is coated. Seal or cover, and refrigerate for 2 to 3 hours or at least 30 minutes.
- Prepare your skewers. Soak wooden skewers in water for about 30 minutes. Preheat your grill to medium-high heat.
- Remove marinated mushrooms from the bag. Thread them onto skewers, leaving space between each for even cooking. Optionally add colorful veggies.
- Cook the skewers on the grill for 10 to 12 minutes, turning them occasionally until tender and slightly charred.
- Transfer grilled skewers to a serving platter. Sprinkle with parsley or chives and serve warm as a side dish, appetizer, or plant-based main course.
Notes
These skewers can be served with a fresh side salad or a dipping sauce like tahini or vegan aioli.
