Mini Pineapple Upside-Down Cheesecakes are delightful treats that combine the richness of cheesecake with the sweetness of pineapple.


Ingredients

  • 1/4 cup melted butter
  • 2 packages of softened cream cheese
  • 1/2 cup granulated sugar
  • 2 large eggs

  • 1 can (20 oz) pineapple chunks, drained
  • 1/4 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine graham cracker crumbs with melted butter; press into muffin liners.
  3. Mix cream cheese and granulated sugar until smooth; add eggs and vanilla.
