- 2 cups warm milk (about 110 degrees)
- 1 Tbsp instant yeast
- 1 tsp sugar
- 2–1/2 cups whole wheat flour
- 2 to 3 cups bread flour
- 6 Tbsp shelled sunflower seeds
- 6 Tbsp pepitas
- 2 Tbsp sesame seeds
- 1 Tbsp poppy seeds
- 1 Tbsp flax seeds
- 2 tsp salt
- 1/4 cup honey
- 1/4 cup canola oil
- Egg wash: 1 egg whisked together with 1 Tbsp water
- Extra seeds for sprinkling over the top
Instructions
- Begin your baking adventure by pouring the warm milk into a mixing bowl. Whisk in the instant yeast and sugar, allowing it to rest for 3 to 5 minutes or until it becomes foamy and frothy.
- In the mixer bowl, combine the whole wheat flour, 2 cups of the bread flour, and the various seeds. Add the salt to this mixture to evenly distribute the flavor.
- Next, incorporate the foamy milk and yeast mixture, followed by the canola oil and honey into the dry ingredients. Using the dough hook attachment, mix everything on low speed.
- Allow the dough to knead with the dough hook on low speed for about 5 minutes.
- Cover the bowl with a kitchen towel and let it rise for approximately one hour, or until the dough has doubled in size.
- After the dough has risen, preheat your oven to 350°F.
- To get a beautiful glaze on your loaves, brush the egg wash over the tops before baking.
- Place the pans in the preheated oven and bake for 28 to 30 minutes.
- Once baked, carefully remove the loaves from the pans and allow them to cool completely on a wire rack.
