  • 2 cups warm milk (about 110 degrees)
  • 1 Tbsp instant yeast
  • 1 tsp sugar
  • 21/2 cups whole wheat flour
  • 2 to 3 cups bread flour
  • 6 Tbsp shelled sunflower seeds
  • 6 Tbsp pepitas
  • 2 Tbsp sesame seeds
  • 1 Tbsp poppy seeds
  • 1 Tbsp flax seeds
  • 2 tsp salt
  • 1/4 cup honey
  • 1/4 cup canola oil
  • Egg wash: 1 egg whisked together with 1 Tbsp water
  • Extra seeds for sprinkling over the top

Instructions

  1. Begin your baking adventure by pouring the warm milk into a mixing bowl. Whisk in the instant yeast and sugar, allowing it to rest for 3 to 5 minutes or until it becomes foamy and frothy.
  2. In the mixer bowl, combine the whole wheat flour, 2 cups of the bread flour, and the various seeds. Add the salt to this mixture to evenly distribute the flavor.
  3. Next, incorporate the foamy milk and yeast mixture, followed by the canola oil and honey into the dry ingredients. Using the dough hook attachment, mix everything on low speed.
  4. Allow the dough to knead with the dough hook on low speed for about 5 minutes.
  5. Cover the bowl with a kitchen towel and let it rise for approximately one hour, or until the dough has doubled in size.
  6. After the dough has risen, preheat your oven to 350°F.
  7. To get a beautiful glaze on your loaves, brush the egg wash over the tops before baking.
  8. Place the pans in the preheated oven and bake for 28 to 30 minutes.
  9. Once baked, carefully remove the loaves from the pans and allow them to cool completely on a wire rack.
