  • 16 oz crushed pineapple (well-drained, for the filling)
  • 1/2 cup sour cream (for the filling)
  • 1 teaspoon coconut extract (for the icing)
  • 1 cup powdered sugar (for the icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  2. Combine the flour, sugar, and salt in a mixing bowl, then cut in the cold, cubed butter until it resembles coarse crumbs. Reserve 1 cup for topping.
  3. Press the remaining mixture into the bottom of the baking dish and bake for 15 minutes.
  4. In a separate bowl, whisk the eggs, flour, sugar, and salt until smooth, then stir in the drained crushed pineapple and sour cream.
  5. Pour the filling over the baked crust and spread evenly with a spatula.
  6. Sprinkle reserved crumb mixture over the filling and bake for 60 minutes until golden.
  7. Cool for 10-15 minutes, then drizzle with the icing made from powdered sugar and coconut extract.
  8. Cut into squares and serve.
