Instructions
- Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
- Combine the flour, sugar, and salt in a mixing bowl, then cut in the cold, cubed butter until it resembles coarse crumbs. Reserve 1 cup for topping.
- Press the remaining mixture into the bottom of the baking dish and bake for 15 minutes.
- In a separate bowl, whisk the eggs, flour, sugar, and salt until smooth, then stir in the drained crushed pineapple and sour cream.
- Pour the filling over the baked crust and spread evenly with a spatula.
- Sprinkle reserved crumb mixture over the filling and bake for 60 minutes until golden.
- Cool for 10-15 minutes, then drizzle with the icing made from powdered sugar and coconut extract.
- Cut into squares and serve.
