- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup canned pumpkin puree

- 1 cup powdered sugar (for rolling the cake)
- 8 oz cream cheese, softened
- 1 cup powdered sugar (for frosting)
- 6 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 375°F (190°C). Grease your jelly roll pan and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- In a larger bowl, beat together the eggs and granulated sugar until thick and pale. Mix in pumpkin puree and vanilla.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into the prepared jelly roll pan and bake for about 13-15 minutes.
- Once baked, roll the cake using a kitchen towel and cool it.
- For the frosting, blend cream cheese, powdered sugar, butter, and vanilla until smooth.
- Once cooled, unroll the cake, spread frosting, and roll it up again.
- Chill the rolled cake for at least one hour before slicing and serving.
Notes
Ensure eggs are at room temperature for better mixing and the cake can be made a day ahead.
