  • 2 tablespoons unsalted butter, melted
  • ¼ cup crumbled blue cheese (for a milder flavor, substitute with Gorgonzola)
  • ¼ cup toasted walnuts, chopped
  • 2 tablespoons honey (plus more for drizzling)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon cinnamon (optional)
  • Fresh thyme (optional, for garnish)

Instructions

  1. Begin by preheating your oven to 375°F (190°C). This step is crucial to achieving that perfect roast. Line a baking sheet with parchment paper or foil; this will prevent any sticking and make cleanup much easier.
  2. Take each pear and slice it in half lengthwise. Use a spoon or melon baller to carefully remove the core, creating a small cavity for the delicious filling. Brush the cavity and outer flesh with melted butter for that extra rich flavor, and if you’re feeling adventurous, lightly sprinkle with cinnamon to add a warm spice note.
  3. Arrange the pear halves cut side up on your prepared baking sheet. Roast them in the preheated oven for 20–25 minutes, or until the pears are tender and the edges are slightly caramelized. This roasting process enhances the natural sweetness of the pears.
  4. Remove the baking sheet from the oven and carefully fill each pear cavity with crumbled blue cheese and chopped toasted walnuts. Drizzle an enticing amount of honey over the top, followed by a splash of fresh lemon juice to brighten the flavors.
  5. Pop the pears back into the oven for another 5 minutes. This will allow the blue cheese to melt slightly, becoming creamy and heavenly. It will also blend wonderfully with the warm pears.
