Instructions
- In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and fine salt.
- In a separate large bowl, crack two large eggs and beat them until they’re well mixed. Gradually whisk in the milk, plain yogurt (or sour cream), melted butter, and optional vanilla extract.
- Carefully fold the dry ingredients into the wet mixture.
- Place a large nonstick skillet or griddle over medium heat and add the unsalted butter or neutral oil. Pour in batter and scramble as it cooks.
- Transfer the cooked pancake bites to a plate and serve warm.
