  • 3 cups cooked jasmine rice, cold and day-old
  • 6 oz ribeye or sirloin steak, cooked and sliced
  • 6 oz large shrimp, peeled and deveined
  • 2 large eggs, beaten
  • 2 cloves garlic, minced
  • 1 small white onion, diced
  • 2 stalks green onions, chopped (separate white and green parts)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 2 tablespoons neutral oil (canola or avocado)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Slice the cooked steak into bite-sized pieces and pat the shrimp dry. Beat the eggs and chop the onion and garlic.
  2. Scramble the Eggs: Heat oil in a skillet, scramble the eggs, then set aside.
  3. Cook the Shrimp: Sear the shrimp in the hot pan until pink, then set aside with the eggs.
  4. Sear the Steak: Quickly sear the steak pieces until warmed, then set aside.
  5. Sauté the Aromatics: Sauté onion until soft, then add garlic and the white parts of green onion until fragrant.
  6. Fry the Rice: Stir-fry the cold rice in the pan, crisping it up for about 4 to 5 minutes.
  7. Combine Everything: Return the shrimp, steak, and eggs to the pan, adding soy sauce and optional oyster sauce.
  8. Final Touches: Mix in sesame oil, season, and toss in green onion tops before serving.
