Instructions
- Start by creating the luscious cheesecake filling that will make these cookies truly special. In a medium mixing bowl, beat together the softened cream cheese, 1/4 cup of granulated sugar, and 1/2 teaspoon of vanilla extract until the mixture is perfectly smooth and creamy. Once achieved, spoon portions of the filling onto a plate or baking sheet lined with parchment paper and place it in the freezer to harden.
- Now it’s time to mix the dry ingredients. In a separate bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Whisk them together thoroughly to ensure an even distribution of the leavening agents.
- In a large mixing bowl, cream together the softened unsalted butter, 3/4 cup granulated sugar, and 1/4 cup light brown sugar until the mixture becomes light and fluffy.
- Next, gradually add the dry mixture to the butter mixture, stirring cautiously until just combined. Be careful not to overmix, as this can lead to tough cookies!
- To create the signature filled cookies, scoop out portions of dough and flatten each ball in your hands. Place a frozen cheesecake filling dollop in the center, followed by a spoonful of strawberry jam.
