  • 1/2 cup strawberry jam or preserves
  • 1/4 cup fresh strawberries, finely diced (optional)

Instructions

  1. Start by creating the luscious cheesecake filling that will make these cookies truly special. In a medium mixing bowl, beat together the softened cream cheese, 1/4 cup of granulated sugar, and 1/2 teaspoon of vanilla extract until the mixture is perfectly smooth and creamy. Once achieved, spoon portions of the filling onto a plate or baking sheet lined with parchment paper and place it in the freezer to harden.
  2. Now it’s time to mix the dry ingredients. In a separate bowl, combine the all-purpose flour, baking soda, baking powder, and salt. Whisk them together thoroughly to ensure an even distribution of the leavening agents.
  3. In a large mixing bowl, cream together the softened unsalted butter, 3/4 cup granulated sugar, and 1/4 cup light brown sugar until the mixture becomes light and fluffy.
  4. Next, gradually add the dry mixture to the butter mixture, stirring cautiously until just combined. Be careful not to overmix, as this can lead to tough cookies!
