Spaghetti Aglio e Olio is a quick and flavorful dish that uses just a few pantry staples.


Ingredients

  • 400g spaghetti
  • 68 garlic cloves
  • 1/3 cup extra virgin olive oil
  • 1/21 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup reserved pasta water
  • 1/2 cup Parmesan cheese (optional)

Instructions

  1. Start by bringing a large pot of salted water to a rapid boil. Add the spaghetti and cook according to the package instructions, usually around 8-10 minutes, until it reaches an al dente texture.
  2. Before draining the spaghetti in a colander, make sure to reserve 1/2 cup of the starchy pasta water.
  3. While the pasta is boiling, take the time to thinly slice the garlic cloves.
  4. In a wide pan over medium-low heat, pour in the extra virgin olive oil. Once warm, add the sliced garlic and let it cook gently.
  5. After the garlic is perfectly golden, stir in the red pepper flakes.
  6. Add the drained spaghetti directly into the pan with the garlic oil. Toss it gently to ensure every strand is coated in the aromatic oil.
  7. Pour in a bit of the reserved pasta water at a time, tossing continuously.
  8. Sprinkle in the salt, black pepper, and the chopped fresh parsley.
  9. Plate your Spaghetti Aglio e Olio and, if desired, top with freshly grated Parmesan cheese.
