Spaghetti Aglio e Olio is a quick and flavorful dish that uses just a few pantry staples.

- 400g spaghetti
- 6–8 garlic cloves
- 1/3 cup extra virgin olive oil
- 1/2–1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/2 cup reserved pasta water
- 1/2 cup Parmesan cheese (optional)
Instructions
- Start by bringing a large pot of salted water to a rapid boil. Add the spaghetti and cook according to the package instructions, usually around 8-10 minutes, until it reaches an al dente texture.
- Before draining the spaghetti in a colander, make sure to reserve 1/2 cup of the starchy pasta water.
- While the pasta is boiling, take the time to thinly slice the garlic cloves.
- In a wide pan over medium-low heat, pour in the extra virgin olive oil. Once warm, add the sliced garlic and let it cook gently.
- After the garlic is perfectly golden, stir in the red pepper flakes.
- Add the drained spaghetti directly into the pan with the garlic oil. Toss it gently to ensure every strand is coated in the aromatic oil.
- Pour in a bit of the reserved pasta water at a time, tossing continuously.
- Sprinkle in the salt, black pepper, and the chopped fresh parsley.
- Plate your Spaghetti Aglio e Olio and, if desired, top with freshly grated Parmesan cheese.

Best served immediately while it’s still warm. Try different variations to suit your taste!
