- Begin by bringing a large pot of salted water to a rolling boil. Once boiling, carefully add the rotini pasta. Cook until it reaches an al dente texture, which usually takes about 8-10 minutes. Once the pasta is ready, reserve ½ cup of the pasta water for later use, then drain the rotini and set it aside while you prepare the sauce and steak.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once the butter melts and bubbles, add the cubed sirloin steak in a single layer. Season generously with salt and freshly ground black pepper. Allow the steak to sear without moving it for about 2–3 minutes on each side, until it achieves a lovely brown color. Once seared, remove the steak from the skillet and set it aside temporarily, allowing the flavors to rest.
- In the same skillet you used for the steak, add the remaining tablespoon of butter. Let it melt, and then introduce the minced garlic. Sauté for about 30 seconds, stirring frequently, until the garlic is fragrant and slightly golden but be cautious not to burn it. Next, pour in the heavy cream, scraping any browned bits left from the steak to enhance the flavor. Allow the mixture to simmer on low heat for 2–3 minutes, letting it thicken slightly.
- Now, gradually stir in the freshly grated parmesan cheese. Watch as it melts into the luscious cream, creating a velvety sauce. If the sauce becomes too thick, you can add a splash of reserved pasta water to loosen it. This will help in achieving the perfect consistency for coating the pasta.
- Once the sauce is creamy and the cheese is well incorporated, add the drained rotini directly into the skillet. Toss the pasta gently, ensuring every piece gets coated in that delicious garlic parmesan sauce. Lastly, reintroduce the steak bites to the skillet, mixing everything together lightly until combined.
