- ¼ tsp strawberry extract

- Strawberry jam (for filling)
Instructions
- To kick things off, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent your cookies from sticking.
- In a medium-sized bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.
- In a larger mixing bowl, combine the softened unsalted butter with the granulated sugar. Cream them together until light and fluffy.
- Crack in a large egg, and add the vanilla and strawberry extracts. Mix until fully integrated.
- Gradually incorporate the dry mixture into the wet mixture, stirring until just combined.
- Using your hands, roll the dough into 1-inch balls and roll each ball in granulated sugar to coat.
- With the back of your thumb, press down the center of each cookie to create a small indentation.
- Bake for 8-10 minutes until edges set and centers are soft. Add strawberry jam to each cookie after baking.
