  • Pink food coloring (optional)
  • Strawberry jam (for filling)

Instructions

  1. To kick things off, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent your cookies from sticking.
  2. In a medium-sized bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.
  3. In a larger mixing bowl, combine the softened unsalted butter with the granulated sugar. Cream them together until light and fluffy.
  4. Crack in a large egg, and add the vanilla and strawberry extracts. Mix until fully integrated.
  5. Gradually incorporate the dry mixture into the wet mixture, stirring until just combined.
  6. Using your hands, roll the dough into 1-inch balls and roll each ball in granulated sugar to coat.
  7. With the back of your thumb, press down the center of each cookie to create a small indentation.
  8. Bake for 8-10 minutes until edges set and centers are soft. Add strawberry jam to each cookie after baking.
