  • 2 cups cherry tomatoes

  • 2 tablespoons fresh basil, chopped

  • Toasted baguette slices, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease your baking dish.
  2. Toss cherry tomatoes with olive oil, garlic, salt, and pepper, then roast for 15-20 minutes.
  3. Combine ricotta, mozzarella, and Parmesan in a bowl, seasoning lightly.
  4. Layer the cheese mixture in the baking dish, topped with roasted tomatoes.
  5. Bake at 375°F (190°C) for 15-18 minutes, broiling for 1-2 minutes if desired.
  6. Garnish with fresh basil and balsamic glaze, serve immediately.
