Ingredients

  • 2 1/4 cups finely ground almonds
  • 1 3/4 cups powdered sugar
  • 2 teaspoons ground cinnamon
  • 1 pinch salt
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 large egg white (for icing)
  • 1 cup powdered sugar (for icing)
  • 1/2 teaspoon lemon juice (for icing)

Instructions

  1. In a large mixing bowl, combine 2 1/4 cups of finely ground almonds, 1 3/4 cups of powdered sugar, 2 teaspoons of ground cinnamon, and a pinch of salt. Mix these dry ingredients together thoroughly until they are well incorporated.
  2. In a separate bowl, use an electric mixer to beat the two large egg whites until they form stiff peaks. Gently fold in 1 teaspoon of vanilla extract and 1 tablespoon of lemon juice.
  3. Carefully fold the whipped egg white mixture into the dry ingredients, ensuring not to deflate the air you’ve incorporated.
  4. Wrap the dough tightly in plastic wrap and refrigerate it for at least 1 hour.
  5. Preheat your oven to 325°F (163°C) and line your baking sheets with parchment paper.
  6. Once the dough is chilled, place it between two sheets of parchment paper and use a rolling pin to roll it out to about 1/2-inch thickness.
  7. Using a star-shaped cookie cutter, press down into the rolled-out dough and transfer the star shapes onto the prepared baking sheets.
  8. For the icing, whisk one egg white in a bowl until it becomes frothy. Gradually add 1 cup of powdered sugar and 1/2 teaspoon of lemon juice, whisking until it’s thick and smooth.
  9. Using a pastry brush, apply a thin layer of icing onto each cookie.
  10. Place the baking sheets in your preheated oven and bake the cookies between 10 to 12 minutes.
  11. Once the cookies are done, transfer them to a wire rack and allow them to cool completely before serving.
