- 2 1/4 cups finely ground almonds
- 1 3/4 cups powdered sugar
- 2 teaspoons ground cinnamon
- 1 pinch salt
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice

Instructions
- In a large mixing bowl, combine 2 1/4 cups of finely ground almonds, 1 3/4 cups of powdered sugar, 2 teaspoons of ground cinnamon, and a pinch of salt. Mix these dry ingredients together thoroughly until they are well incorporated.
- In a separate bowl, use an electric mixer to beat the two large egg whites until they form stiff peaks. Gently fold in 1 teaspoon of vanilla extract and 1 tablespoon of lemon juice.
- Carefully fold the whipped egg white mixture into the dry ingredients, ensuring not to deflate the air you’ve incorporated.
- Wrap the dough tightly in plastic wrap and refrigerate it for at least 1 hour.
- Preheat your oven to 325°F (163°C) and line your baking sheets with parchment paper.
- Once the dough is chilled, place it between two sheets of parchment paper and use a rolling pin to roll it out to about 1/2-inch thickness.
- Using a star-shaped cookie cutter, press down into the rolled-out dough and transfer the star shapes onto the prepared baking sheets.
- For the icing, whisk one egg white in a bowl until it becomes frothy. Gradually add 1 cup of powdered sugar and 1/2 teaspoon of lemon juice, whisking until it’s thick and smooth.
- Using a pastry brush, apply a thin layer of icing onto each cookie.
- Place the baking sheets in your preheated oven and bake the cookies between 10 to 12 minutes.
- Once the cookies are done, transfer them to a wire rack and allow them to cool completely before serving.
