- 1 ½ lbs carrots
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon honey
- 1 teaspoon lemon juice
Instructions
- Begin by peeling the 1.5 pounds of carrots. Once peeled, slice them diagonally to create even pieces.
- Next, bring a large pot of salted water to a boil. Once boiling, add your sliced carrots and let them cook for about 4 to 5 minutes.
- In a large skillet, combine 2 tablespoons of unsalted butter and 1 tablespoon of olive oil.
- Now it’s time to add your par-cooked carrots into the skillet. Toss them gently in the garlic butter mixture to coat evenly.
- Once the carrots are perfectly caramelized, it’s time to season them.
- Remove the skillet from the heat and then stir in the freshly chopped parsley and dill.
Notes
Let the carrots cook for an additional 5 to 7 minutes, stirring occasionally to enhance their sweetness.
