  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon honey
  • 1 teaspoon lemon juice

Instructions

  1. Begin by peeling the 1.5 pounds of carrots. Once peeled, slice them diagonally to create even pieces.
  2. Next, bring a large pot of salted water to a boil. Once boiling, add your sliced carrots and let them cook for about 4 to 5 minutes.
  3. In a large skillet, combine 2 tablespoons of unsalted butter and 1 tablespoon of olive oil.
  4. Now it’s time to add your par-cooked carrots into the skillet. Toss them gently in the garlic butter mixture to coat evenly.
  5. Once the carrots are perfectly caramelized, it’s time to season them.
  6. Remove the skillet from the heat and then stir in the freshly chopped parsley and dill.

Let the carrots cook for an additional 5 to 7 minutes, stirring occasionally to enhance their sweetness.
