- 2 medium apples, peeled and diced

- 1/2 teaspoon cinnamon (for streusel)
- 3 tablespoons cold butter, cubed (for streusel)

- Caramel sauce, for drizzle
Instructions
- Preheat your oven to 325°F (163°C) and prepare a 12-cup muffin pan by lining it with paper liners. Lightly spray each liner with nonstick cooking spray.
- In a medium bowl, mix together the crushed graham crackers, melted butter, and granulated sugar until the mixture resembles wet sand. Press about one tablespoon of this mixture into the bottom of each muffin liner. Bake for 5-6 minutes until set and lightly golden. Let cool.
- Beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, sour cream, vanilla extract, and egg, mixing until well combined.
- In a skillet over medium heat, melt one tablespoon of butter. Add diced apples, brown sugar, and cinnamon. Sauté for 5-7 minutes until apples are tender. Let cool slightly.
- In a bowl, combine flour, brown sugar, and cinnamon for streusel. Cut in the cold butter until the mixture resembles coarse crumbs.
- Spoon cheesecake filling into each crust, filling about three-quarters full. Spoon the sautéed apples over the filling, then sprinkle the streusel topping over the apples.
- Bake for 20-22 minutes, until centers are set. Let cool for 30 minutes, then chill for at least 2 hours.
