  • 2 cups salsa
  • 1 cup black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 3 cloves garlic
  • 1 medium onion
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro

Instructions

  1. Prepare the Ingredients: Gather all the ingredients listed above and set them out on your countertop. Drain the black beans and corn thoroughly to avoid excess liquid in your dish. Dice the onion and mince the garlic.
  2. Layer the Chicken: Place the chicken breasts at the bottom of your crock pot for even cooking.
  3. Add Vegetables and Flavoring: Distribute the diced onion and minced garlic over the chicken. Pour the salsa and diced tomatoes over the top.
  4. Maintain Desired Moisture: Add chicken broth to keep the chicken moist.
  5. Spice it Up: Sprinkle the taco seasoning evenly over the mixture.
  6. Add Beans and Corn: Gently add the black beans and corn on top.
  7. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours.
  8. Shred the Chicken: Remove and shred the chicken, then return it to the pot.
