Description
This Sheet Pan Sausage & Veggies recipe is a quick and flavorful weeknight dinner that’s both healthy and satisfying.
Ingredients
Scale
- 14 oz smoked sausage
- 2 medium zucchini
- 2 medium yellow squash
- 3 large carrots
- 3 medium red potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp Italian seasoning
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley (optional)
Instructions
- Start by preheating your oven to 400°F (200°C). While you wait for the oven, prepare your sheet pan by lining it with parchment paper or lightly greasing it with a bit of oil. This step ensures your food doesn’t stick and makes for an easy clean-up after a delicious meal.
- Next, slice your smoked sausage into ½-inch rounds. This size helps the sausage cook evenly and allows for great flavor absorption during roasting. Now, chop up all the vegetables into similar-sized, bite-sized pieces. Uniformity in size is key to ensure everything cooks at the same rate. Aim for pieces that are roughly the same size as your sausage slices for the best results.
- In a large mixing bowl, add the prepared sausage and chopped vegetables. Drizzle the olive oil over the mixture, ensuring everything is well-coated. Then, season with garlic powder, onion powder, Italian seasoning, salt, and black pepper. Toss everything together until the sausage and veggies are well coated with the oil and seasonings. This step is crucial as it infuses the flavors deeply into the dish.
- Now it’s time to spread the mixture onto your prepared sheet pan. Make sure to arrange it in a single layer without overcrowding, which helps achieve that perfect roast texture. If you overcrowd the pan, steaming may occur and diminish the crispness of your veggies and sausage.
- Place the sheet pan in the preheated oven and roast for 35–40 minutes. Halfway through the cooking time, give everything a good stir to ensure even roasting. The goal is to have the sausage browned, and the vegetables tender and slightly caramelized. You’ll know it’s ready when the kitchen is filled with a mouthwatering aroma!
- Once the sheet pan comes out of the oven, let it cool for a moment. If you’d like, sprinkle fresh parsley over the top for a pop of color and freshness before serving. This dish can be served hot straight from the oven or allowed to cool for meal prep. It’s delicious either way!
Notes
Ensure vegetables are cut into similar sizes to guarantee even cooking. For an extra boost of flavor, marinate the sausage for a few hours before making the dish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
