  • 1 lb smoked sausage, sliced into rounds
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Begin by preheating your oven to 425°F (220°C). As the oven heats, take out your large sheet pan, and either lightly grease it with cooking spray or line it with parchment paper to make for easy clean-up later on.
  2. Next, wash and cut your ingredients. Halve the baby potatoes. Prepare the broccoli florets by dicing them into suitable sizes. Slice both the red and yellow bell peppers into strips.
  3. In a large mixing bowl, combine your sausage slices, halved potatoes, broccoli florets, and bell peppers. Drizzle the olive oil over the mix, and then sprinkle garlic powder, Italian seasoning, smoked paprika, salt, and black pepper on top. Toss until well-coated.
  4. Spread the mixture evenly across the sheet pan and roast for 25 to 30 minutes, stirring halfway through.
  5. Once done, remove from the oven and sprinkle grated Parmesan cheese over the sausage and veggies. Garnish with freshly chopped parsley before serving.
