Instructions

  1. Start by preheating your oven to 400°F (200°C). In a spacious mixing bowl, take your halved baby potatoes and drizzle them with 1 tablespoon of olive oil along with half of the minced garlic. Sprinkle in the dried oregano, thyme, paprika, salt, and black pepper, and toss everything well until the potatoes are thoroughly coated in the seasoning mixture.
  2. Once your potatoes are seasoned, spread them evenly on a large baking sheet in a single layer. Make sure they’re not overcrowded; giving them space will help them achieve a wonderful golden-brown color during roasting. Now, set this aside while you prepare the chicken.
  3. In the same bowl used for the potatoes, coat your chicken thighs with the remaining 2 tablespoons of olive oil, the rest of the minced garlic, salt, black pepper, and the grated Parmesan cheese. Make sure each piece is well covered, encouraging a crispy, cheesy crust to develop during baking. Arrange the chicken pieces skin-side up among the potato halves on the baking sheet.
