- 2 tablespoons apple cider vinegar
- 2 pounds boneless, skinless chicken thighs or breasts
- 2 tablespoons cornstarch
- 2 tablespoons water
- 2 stalks green onions, chopped (for garnish)
Instructions
- Begin by placing the boneless chicken thighs or breasts into the bottom of your slow cooker. Arrange them in a single layer to ensure even cooking.
- In a separate medium-sized bowl, combine the honey, gluten-free soy sauce, ketchup, minced garlic, and apple cider vinegar.
- Pour the prepared sauce over the chicken in the slow cooker. Make sure to drizzle it evenly.
- Cover your slow cooker and set it to cook. You have two options here: cook on LOW for 5-6 hours or on HIGH for 2.5-3.5 hours.
- Once the chicken is done cooking, carefully remove it from the slow cooker using tongs or a slotted spoon.
- To thicken the sauce, mix cornstarch and water in a small bowl to create a slurry. Return the shredded chicken to the slow cooker, add the slurry, and stir.
