  • 2 tablespoons apple cider vinegar
  • 2 pounds boneless, skinless chicken thighs or breasts
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 stalks green onions, chopped (for garnish)

Instructions

  1. Begin by placing the boneless chicken thighs or breasts into the bottom of your slow cooker. Arrange them in a single layer to ensure even cooking.
  2. In a separate medium-sized bowl, combine the honey, gluten-free soy sauce, ketchup, minced garlic, and apple cider vinegar.
  3. Pour the prepared sauce over the chicken in the slow cooker. Make sure to drizzle it evenly.
  4. Cover your slow cooker and set it to cook. You have two options here: cook on LOW for 5-6 hours or on HIGH for 2.5-3.5 hours.
  5. Once the chicken is done cooking, carefully remove it from the slow cooker using tongs or a slotted spoon.
  6. To thicken the sauce, mix cornstarch and water in a small bowl to create a slurry. Return the shredded chicken to the slow cooker, add the slurry, and stir.
