Delicious Gooey Caramel Apple Buttermilk Muffins filled with fresh apple and caramel.

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, melted and cooled
- 1 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups peeled, cored, and diced apples (Granny Smith recommended)
- 1 cup chopped pecans
- 1/2 cup caramel sauce (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla until well combined.
- Pour the wet mixture into the dry mixture and stir gently until just combined, then fold in apples and pecans.
- Divide the batter among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes until a toothpick comes out clean or with moist crumbs.
- Cool in the tin for 5 minutes before transferring to a wire rack. Drizzle with caramel before serving.
Notes
Muffins stay fresh for 2 days at room temperature; freeze for longer storage.
