Description

Delicious Gooey Caramel Apple Buttermilk Muffins filled with fresh apple and caramel.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups peeled, cored, and diced apples (Granny Smith recommended)
  • 1 cup chopped pecans
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the melted butter, buttermilk, eggs, and vanilla until well combined.
  4. Pour the wet mixture into the dry mixture and stir gently until just combined, then fold in apples and pecans.
  5. Divide the batter among the muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes until a toothpick comes out clean or with moist crumbs.
  7. Cool in the tin for 5 minutes before transferring to a wire rack. Drizzle with caramel before serving.

Notes

Muffins stay fresh for 2 days at room temperature; freeze for longer storage.
