  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. Start by patting the shrimp dry with a paper towel to remove excess moisture. This ensures that the marinade adheres well to the shrimp. Take a large mixing bowl and place the dried shrimp inside.
  2. In a separate bowl, combine olive oil, fresh lime juice, minced garlic, smoked paprika, chili powder, cayenne pepper, honey, salt, and black pepper. Whisk the mixture until well-blended. This marinade not only enhances the shrimp’s flavor but also tenderizes it.
  3. Pour the marinade over the shrimp in the large bowl. Mix everything gently until all shrimp pieces are evenly coated. Cover the bowl with a lid or plastic wrap and refrigerate for at least 15 to 30 minutes, allowing the shrimp to soak in those zesty flavors.
  4. While the shrimp marinates, soak your wooden skewers in water if you are using them. This will help prevent them from burning on the grill. If you’re using metal skewers, there’s no need to soak them.
  5. Once the shrimp are marinated, it’s time to assemble the skewers. Thread a piece of shrimp onto a skewer, followed by a chunk of pineapple, red onion, and bell pepper. Alternate ingredients until the skewer is full, leaving a little space between each piece. This helps everything cook evenly and ensures that flavors meld beautifully.
  6. Before grilling the skewers, preheat your grill to medium-high heat. A well-heated grill is crucial for achieving those beautiful grill marks and for cooking everything through evenly.
