Instructions
- Start by setting your oven to preheat at 425°F (220°C). In the meantime, take the peeled and cubed sweet potatoes and toss them in a bowl with olive oil. Add chili powder, cumin, salt, and pepper, mixing until each piece is well-coated. Spread the seasoned sweet potatoes evenly on a baking sheet. Roast them in the oven for about 25 minutes, flipping them halfway through to ensure they become golden and tender on all sides.
- While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef to the skillet, seasoning it with garlic powder, additional chili powder, cumin, salt, and pepper. Stir the beef frequently for about 8–10 minutes, ensuring it cooks thoroughly and browns evenly. If there’s excess fat, drain it carefully to keep the dish light.
- In the same skillet used for the beef, or using a separate pan, heat a splash of oil. Add the diced bell peppers and sauté them for about 5–6 minutes. You want them just tender, retaining some crunch to elevate the texture of the power bowl.
- Once all components are ready, it’s time to assemble your power bowl. Start with a generous base of roasted sweet potatoes, then layer the cooked ground beef over it. Add the sautéed bell peppers on top, followed by a dollop of creamy Greek yogurt. Finish with a sprinkle of fresh cilantro for added flavor and color.
