This delightful treat is inspired by the classic candy bar but reimagined with all-star ingredients to offer a healthier alternative without compromising on flavor.


Ingredients

  • 1 1/2 cups unsweetened shredded coconut
  • 1/3 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • A pinch of salt
  • 24 whole almonds
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (for melting chocolate)

Instructions

  1. Begin by taking a mixing bowl and adding your shredded coconut, melted coconut oil, honey or maple syrup, vanilla extract, and a pinch of salt. Mix these ingredients thoroughly until they are well combined, creating a cohesive mixture that’s ready to be shaped.
  2. Once mixed, it’s time to shape your coconut mixture. You can either form small rectangular bars or roll the mixture into balls. Place each shaped piece onto a baking sheet lined with parchment paper. Press one almond gently into the center of each coconut shape to embed it beautifully.
  3. Place your tray of shaped coconut bars into the freezer. Allow them to firm up for about 20 to 30 minutes. This step is crucial as it ensures your coconut bars keep their shape during the chocolate dipping process.
  4. While the bars are firming up, it’s time to melt your dark chocolate chips. Combine them with the additional 1 tsp of coconut oil, and melt these together in a heatproof bowl over a pot of simmering water, or use a microwave, stirring in short intervals until smooth.
  5. Take the chilled coconut-almond bars and dip each one into the melted chocolate. Ensure the bars are fully coated for that signature Almond Joy taste. Place them back onto the baking sheet and refrigerate until the chocolate has set.
